My Quick and Easy Chicken Fried Rice

Working overnights is a struggle. Especially when it comes to getting an actual real meal. Everything is either close during my lunch break or it’s a trip to the gas station for Doritos, a Snicker and Sprite. So for me having a quick and easy meal that I can make and last a few days is clutch. This is one of my quick go-to meals for work. All my third shift workers can relate, after working all night the last thing you want to do is slave in the kitchen all day making lunch or dinner. This takes 15 minutes max!

Ling Ling Brand Chinese-Style Vegetable Fried rice.

  • Rice, Soy Sauce, Edamame, Carrots, Corn & Red Bell Peppers.
  • Pre-made Grilled Chicken Breast from Wegmans
  • 2 Eggs (scrambled)
  • Wegmans Organic Stir Fry Sauce
  • Scallions

After trying a few frozen Chinese food brands, Ling Ling’s Chinese-Style Vegetable Fried Rice is one of my favorites to go with. P.f. Changs Vegetable Fried Rice is another brand that is really good as well.
This recipe is really simple, you cook the rice per the bag instructions. Either frozen in the pan with a little oil, or to save even more time you can cook it in the microwave then transfer to a skillet or wok before adding some fresh ingredients and your protein. I went with grilled chicken, eggs, scallions and a stir fry sauce to help freshen up the dish.
From scratch is the best way to go when cooking, but if you come across a really good brand like Ling Ling or P.F. Changs and add some fresh ingredients it will taste just as good as takeout trust me!
