The Recipe. (by Sir not K.Dot and Dre btw)…

Welcome back! I had to take some time to shake this covid/winter/fu*k my job funk that had settled over my head as of late. Also I wanted to upgrade my laptop in the meantime. While I was gone from the blog I’ve been going to the doctor to correct my sleep apnea and severe acid reflux. I’ll be sleeping with a cpap machine soon enough to help with the sleep apnea; And pending the results from my procedure this week, I’ll know exactly what I may need to do in regards to my acid reflux if I need surgery or will I continue to just monitor what I eat as long as use the medicine prescribe to me.

A word of advice to all, as you get older make sure you pay attention to your health. Get checked up regularly and make sure you are watching what you eat. In your twenties you think you are invincible and tend to eat and drink whatever you want. Trust me, it will catch up to you. Take care of your body people!

On a more positive note, with this new found journey to try and get my health right I am eating better and trying some things. Todays recipe is a simple one, Juice’s Vegan Nachos. One of the dietary restrictions I have is red meat. Normally when I make anytime of tacos/nachos I use ground turkey anyway. During one random Sunday Trip to the Easton Public Market, I came across Urban Accents Plant based Street Tacos. A ground veggie meatless mix that was great! Full of flavors like chipotle peppers, garlic and cumin. All the flavors needed in a meat substitute for tacos, burritos or nachos. It replaces the 1 pound of ground meat most nachos/taco recipes call for. It is also high in protein and fiber, while cutting out the fat and calories.

The directions are fairly simply:

  1. Hydrate the contents of the package in a cup of hot water for 5 minutes.
  2. Heat 3 tablespoons of oil in a pan, and sauté the peppers and onions until softened.
  3. Stir in the meatless mix and cook for 5 minutes.
  4. Serve on warm tortilla’s with cilantro and onions.****

In my case I made nachos. I just spread the plant based mixture, peppers and onions over the nacho chips before adding more toppings. Also the chips I used… Organic Chia & Quinoa Chips from Late July Snacks. You heard It here first they are what’s hot in the streets!! Besides the meatless mixture with the peppers and onions, I added olives (green because black olives are trash!), fresh Pico de Gallo and shredded cheese. Besides the texture, of the plant based mixture it felt like I had regular ole nachos with ground turkey of beef. I definitely love this plant based option. If you are looking to switch things up, or you’re a vegan looking for a new option. This is the way to go! The only small complaint was the seasoning. I had to add some more as the mixture cooked. Feels like as it sat in the hot water it lost a kick in the spice and seasoning department. So don’t be afraid to add an extra teaspoon of cumin, or ancho chili pepper.

As I continue on this journey to get in better shape and eat better, I plan on making more vegan and meatless meals over the next few months. I hope you guys give this meatless option a try and let me know what you think.
